General Description

This annual from the eastern Mediterranean is used as an herb, spice, and medicinal plant. Growing rapidly from a spring sowing, 'Delfino' forms a clump of pungent lobed dill-like leaves (cilantro) that add zest to soups, salads, beans, and other foods. Leaves are ready for harvest seven to eight weeks after sowing. Flat clusters of pinkish-white flowers appear on branching ferny-leaved stems in summer, followed by spherical ribbed fruits. The fragrant fruits (known as coriander seeds) are used ground or whole in many foods including curries, preserves, and sauces. Fruits ripen three to four months after sowing. Both cilantro and coriander are very important in a wide array of cuisines, including Latin American and Indian. The roots are used in Thai foods.

This easy to grow annual grows in full to partial sun and well-drained soil. Sow seed in spring after danger of freezes (or in the tropical winter). Plants often self-sow. Cilantro is best harvested before plants bloom. Cultivars Enjoy 'Delfino' in herb gardens, containers, or raised beds; its frilly foliage is also pretty mixed in with annual bedding flowers.
